-2.5 lbs. chicken breast cubed [Foltz Family Market]
-3 tablespoons Classic Italian Dressing dry mix [Spice House]
-2 garlic cloves crushed [Foltz Family Market]
-1½ tablespoon mint dry flakes (very important) [Spice House]
-1½ tablespoons Pepper & Lemon seasoning [Spice House]
-½ tablespoons dry rosemary [Spice House]
-1 teaspoon dry basil [Spice House]
-1 teaspoon dry oregano [Spice House]
-1 teaspoon garlic powder [Spice House]
-½ cup vegetable oil
-¼ cup red wine vinegar
Mix all of the above and marinate for at least 2 hours and can be up to 8 hours. Put chicken cubes on wooden skewers and grill. Chicken should be cooked 165 degrees. Get a hardy, crusty long bun and place grilled chicken skewer in bun. Wrap hand firmly around bun and pull out skewer. Use the bun as leverage to pull chicken off skewer. Top with onion, tomato, sautéed peppers or any other of your favorite toppings. Additional fresh marinade can be spooned over the sandwich.
Makes about 8 to 10 skewers.
