French cuisine developed throughout the centuries influenced by the many surrounding cultures of Spain, Italy, Switzerland, Germany and Belgium, in addition to its own food traditions on the long western coastlines of the Atlantic, the Channel and of course inland. French cuisine became modern haute cuisine in the 20th century when introduced by Auguste Escoffier; Escoffier, however, left out much of the local culinary character to be found in the regions of France and was considered difficult to execute by home cooks. Julia Child brought French cuisine to the American home with her debut cookbook, Mastering the Art of French Cooking, and her subsequent television programs, the most notable of which was The French Chef, which premiered in 1963. And then, a few years ago, French cuisine exploded again with the release of the movie Julie & Julia. This menu includes Coquilles St. Jaques, tomato and fresh basil soup with gruyere toasts, and La Tart des Desmoiselles Tatin, a French apple tart.
